What's for Dinner: Tomato Minestrone Soup

I made this a week ago for dinner, and it was a BIG hit! I love a really good soup, a couple times a year I make soup all day and freeze them. This would be a good one to make.
(my notes here)
Tomato Minestrone Soup
Ingredients
  • 2 tablespoons EVOO – Extra Virgin Olive Oil
  • 1 large onion, finely chopped
  • 3 to 4 cloves garlic, finely chopped
  • 1/4 pound green beans, trimmed and cut into thirds (I bought the frozen bag of green beans that were already cut, super easy!)
  • 2 carrots, peeled and diced
  • 3 to 4 small ribs celery with leafy tops, chopped
  • 1 fresh bay leaf
  • 1 15-ounce can garbanzo beans, drained
  • Salt and pepper
  • 1 quart chicken stock
  • 2 cups water
  • 1 28-ounce can tomato purée (Crushed works great too)
  • 1 cup mini penne rigate or mini rigatoni, such as Barilla brand
  • 1/2 basil leaves, torn
  • 4 tablespoons butter
  • 1/2 loaf crusty or stale bread
  • 1 3-ounce jar pine nuts or 1/3 cup
  • 1/4 grated Parmigiano-Reggiano cheese, plus more to pass at table
  • Preparation
  • Preheat oven to 325˚F.

  • Heat a soup pot over medium to medium-high heat with EVOO, 2 turns of the pan. Add onions, garlic, green beans, carrots, celery, bay leaf, garbanzo beans and season liberally with salt and pepper. Cook vegetables 7-8 minutes to soften then add in stock and tomato purée. Bring soup to a boil, add penne and cook 5 minutes. Stir in basil and turn off heat.

  • Meanwhile, melt butter in a small pot over low. Pulse bread and pine nuts together in a food processor. Turn breadcrumbs out onto a cookie sheet and toss with butter and cheese. Toast in oven 12-15 minutes, until light golden in color.

  • Top soup with breadcrumbs and serve.
  • I'm not a big fan of bread crumbs, so I bought a garlic loaf, in the specialty bread isle at the store and cut it into slices and topped it with EVOO and Parmesan Cheese and put it in the oven till it was golden brown and the cheese was melted a little.
Served it with a salad and bread!

Sara's Farewell Video

I made this little video for my friend Sara, who is this year's outgoing Miss Capital City. Since the day I met Sara her heart and generosity for people caught my attention. Over the last year I've been able to work with her, mentor her and be apart of a wonderful phase in her life. My life has been enriched and blessed in so many ways by her. I am proud and honored to have met her and be apart of her life, and to call her friend.

18 Weeks/ 5 Months

Yesterday was a BIG day for us, with lots of milestones. We had our 18 week ultrasound to check on anatomy and gender for the baby. Our appointment was about an hour long, I don't know if this is normal or not but they ended up measuring and checking all sorts of things. I had no idea the number of measurements they do, and checking the heart and blood flow but it was pretty cool to see it all.

The baby is head down, very down! It was hard at first to get a look at what they wanted to see. I had to lie in some uncomfortable positions and was told my the tech twice to stop fidgeting, it's an awful habit of mine. I'm always moving and can't sit still.

The gender was the last thing we found out, and surprise It's a Girl!! I really was convinced that we were having a boy so I was really surprised to hear it's a girl. Very exciting to finally know what we're having. Now, the fun of shopping and planning out a perfect nursery. Now, if the vision in my head will come to fruition it will be beautiful!

It's a girl!!
A sweet little girl, I was convinced that we were having a boy so I was pleasantly surprised to find out we're having a little girl!
Right after our ultrasound, I went shopping! I haven't bought anything yet, and now that I know what we're having it's going to be so fun picking out cute stuff! Orion even got in on the fun and picked out some cute stuff!

Now on to names for this little chica!

Last night was the Miss Twin Cities & Miss Capital City Pageants in St. Paul, MN. I was sitting at home in anticipation to hear about who won! This week was a little bittersweet for me as I was supposed to be there, had we not moved. The Miss Twin Cities family, and Kathy mean the world to me and I will forever be grateful for the time of mentor ship and friendship that I have had with that Organization. I was wishing I could be there to see Sara and Brooke give up their titles, they have both been wonderful queens and I'm so proud to be called their friends. I know great things are ahead for them both!

Couple shout outs:

Tricia, I am so incredibly proud to have worked with you and so proud of your 1st Runner Up finish last night!! I wish I could have been there to see you shine on stage! You've come so far, keep going for it.

Kathy, you are amazing. Nuff, said! What you have done, and continue to do for this Organization continually amazes me. I hope one day I am half the Director you are!

Sara, I'm so lucky to know you and that you are in my life. So proud of you and everything you accomplished as our very 1st Miss Capital City!

G-L-A-M-O-R-O-U-S!

This awesome video was made by River Valley Church in Apple Valley, MN. Starring the amazing Pastor's wives of the church. The video was made as a promo for their annual women's conference called "Sparkle." I think it's just genius, take a look see!

Flashback Friday:

I found this photo today while editing and trashing photos from my computer. It was taken right after Orion and I got my first round of fertility drugs from the Doc's office. I remember thinking at that time, there are no guarantees in this. We had no idea if this was going to work or not, or how long it would take.

I also remember thinking this is so emotional the whole process, I have to do something to keep my spirits up and make this fun. So what did I do? Got out my camera and made Orion take a picture of me with my 1st Round of fertility drugs.

I thought I'd document the whole process, but after it turns out we only had to do 1 round of fertility drugs before getting pregnant!

17 weeks/ 4 months

I'm a little behind this week on my baby Worley updates. This week has been crazy busy, Orion enjoyed 2 days off this week and we spent them hanging out, ordering baby furniture and having fun. I'm getting more energy as we get farther along, but this week I wasn't feeling well last night. I've been getting headaches a lot, which stink. Before my pregnancy I got migraines and they have let up some during the pregnancy but last night came on full force. I can't take my medicine like I used to, it's not recommended for pregnant women. So we're using regular Tylenol, which doesn't seem to be doing the trick but we'll make it through.

How far along? 17 weeks/ 4 months

Total weight gain/loss: 8 lbs. to date

Maternity clothes? Still not wearing maternity clothes.

Stretch marks? none

Sleep: Sleeping ok, but still getting up to use the bathroom.

Best moment this week: buying the crib and changing table.

Movement: none

Cravings: Potatoes in pretty much any form.

Gender: unknown

Labor Signs: none

The Green List:

I found a couple "Green Lists" that I really love, so I decided to compile them into one big list and put in BOLD the things we're already doing @ Worley House. I plan to check them off as we go along in our efforts to be more green, and eco friendly. [see my notes here]
What are you already doing on the list?
1. Plant an herb garden. It’s good to have a reminder around of where our food originates. 2. Switch all your light bulbs to CFLs (or at least switch a few). [one of the first things we did in our home] 3. Create a homemade compost bin.
4. Switch one appliance to an energy efficient model (look for the "energy start" label).
5. Stop using disposable bags - order some reusable bags, or make your own. [I got a ton of these for free at a local fair]
6. Buy a reusable water bottle, and stop buying plastic disposable bottles.
7. Wash laundry in cold water instead of hot.
8. Turn off lights when you leave the room.
9. Don’t turn on lights at all for as long as you can - open your curtains and enjoy natural light.
10. Drive the speed limit, and combine all your errands for the week in one trip.
11. Better yet, walk or ride a bike to your errands that are two miles or closer. 12. Support your local economy and shop at your farmer's market.
13. Turn off your computer completely at night. [saves energy & your computer life]
14. Research whether you can sign up for green power from your utility company. 15. Pay as many bills as possible online. [saves stamps and money]
16. Put a stop to unsolicited mail - sign up to opt out of
pre-screened credit card offers.
17. Reuse scrap paper. Print on two sides, or let your kids color on the back side of used paper.
18. Conduct a quick energy audit of your home.
19. Subscribe to good eco blogs.
20. Before buying anything new, first check your local
Craigslist or Freecycle.
21. Support local restaurants that use food derived less than 100 miles away, and learn more about the benefits of eating locally.
22. Fix leaky faucets. 23. Make your own household cleaners. [a lot of fun & cheap too] 24. Line dry your laundry.
25. Watch The Story of Stuff with your kids, and talk about the impact your household trash has on our landfills.
26. Learn with your kids about another country or culture, expanding your knowledge to other sides of the world.
28. Lower the temperature on your hot water heater.
29. Unplug unused chargers and appliances.

Repurpose something.
31. Collect rainwater, and use it to water your houseplants and garden.
32. Switch to cloth diapers - or at least do a combination with disposables.
33. Switch to shade-grown coffee with the “Fair Trade" label.
34. Use a Diva Cup your monthly cycles.
35. Make rags out of old towels and t-shirts, and
forego buying paper towels.
36. Use cloth napkins daily instead of paper.
37. Read Animal, Vegetable, Miracle, and open your eyes to the way conventional food is processed.

Repurpose glass jars as leftover containers and bulk storage. 39. Five-minute showers - make it a goal for yourself.
40. Donate to - and shop at - thrift stores such as Goodwill. You’ll be recycling perfectly usable items, and you’ll be supporting your local economy.

42. Reuse paper products (like toilet paper rolls) for arts and crafts.
43. Use Bio Bags for your pet’s you know what. [our HOA provides these so it's easy] 44. Use covers or upside down plates when storing food in the fridge instead of plastic wrap.
45. Reuse the plastic containers food comes in (like yogurt) to store your own leftovers.
46. Keep your heat as low as possible [hello, you have blankets right?]
47. Open a window before turning on the AC.

50. Use reusable containers instead of baggies in lunch boxes. [hubby does this well]

Happy Birthday, Love Orion!

You may remember my post about this little camera, here. Well, my Hubby is so great and got me the Flip Video camera for my birthday! I decided to go with the Flip Ultra which records 120 min, instead of just 30 like the pink one I wanted.

I'm excited to use this video camera to chronicle our house projects, vacations and of coarse the baby on the way!

Sleepy Time

After looking online a lot, taking many trips to Babies 'R' Us we finally decided on a crib. Well, I should say I finally decided on one. Hubby and I spent the day today together, and one of our trips was to buy baby furniture for our little one. I wanted something pretty, classic and timeless. Here's what we came up with; the Graco Lauren Collection in white. I'm pretty pleased with it, and can't wait to get bedding as soon as we know what we're having! Take a look:

So, I'm currently reading this book Baby Wise. I'd heard a lot about this book and when I found it at a thrift store a couple weeks back for 50 cents I decided I'd buy and give it a read. I'm about halfway through it, so far. I think it has some good things to say, some things I don't fully understand probably cause I'm just a Mama to be and don't a child yet. But I was wondering.......

Day in Cottonwood

Wednesday, Orion and I headed up to Cottonwood to see friends. Jennie and I's birthdays are just a few days apart so we took the day and headed up to Cottonwood to celebrate together. I've only been up there I think 3 times in the three months we've lived here. So we were well due for a visit. I love spending time up there and seeing our friends. I'm so glad we live closer to them.

We spent the day in Sedona, had some yummy lunch and laughs at Pizza Picasso and walked around Uptown before heading back to Cottonwood for dinner.

Kait asked: Concerning this post: What temp do you keep your thermostat at?

We keep ours at a constant 70 degrees, we turn on the heat when necessary and keep lots of blankets close to the couch. Mostly for me since I always get cold. Now, that we live in warmer weather we don't use the heat much but keep the same temp. Find out what works best for you and your family concerning this issue and then figure out the best way to cut your electric/heat bills every month.


Alicia Marie asked: Tell me about the magic of this lens! I am intrigued.

This lens does a really great job at focusing on what your shooting and blurring the rest. it gives that really cool blurred effect that you see in photos. it's really great for shooting details like wedding rings, flowers, stuff that's small and you want to get every detail of it. I really love it! check out my photography blog to see some shots.


BMWenz asked: Because you are so honest on here, I was wondering if you do still journal or if this has taken it's place?

Well to be honest yes, I still journal. I keep a journal by my bed and pretty much write every day in it. Sometimes multiple times a day. I love the blog, but there's something for me about the written word that I just can't get out of me. Plus, even though I'm pretty honest on the blog there are some things that are just to private for it. :)

For two years I was the Director of Scholarships & Fundraising for the Miss Twin Cities Organization. The Miss America Organization is very dear to me since I was a titleholder back in college in Iowa. Pageants are not for everyone, but for me they were a way of branching out, learning about myself, and pushing myself to reach goals and dreams. Many of the lessons I've learned today came from being involved in this program. Much of who I am as well was shaped by this experience. So now, as an adult I love giving back to this program and helping other young women achieve their dreams and goals through this avenue.

I love monograms, I think they can make anything look more fancy and expensive than it really is. Plus, I just love how classic they are. This one I got in a store up in Alexandria, MN. But I've bought a few other ones online from UppercaseLiving.com they have a ton of great stuff. Check them out.

The Bump Fairy: 16 weeks



Holy Guac!

Week 16

I had a great doctor's appointment this morning, we got to hear the baby's heartbeat. It's very strong and the baby was moving around a ton. I can't feel it yet, but someday soon. Orion's eyes got as big as silver dollars when he heard the heartbeat. So cute! He's very excited.

Everything checked out great, the baby is growing and everything is wonderful! Next month we'll have an ultrasound and find out the sex of the baby. So excited for that!

How far along? 16 weeks/ 4 months

Total weight gain/loss: 8 lbs.

Maternity clothes? Not yet, even though I think I need to break down and buy some pants

Stretch marks? None.

Sleep: Waking up once or twice to use the bathroom.

Best moment this week: Hearing the baby's heartbeat.

Movement: None yet, can't wait for that!

Cravings: Chinese food, I don't know why it just always sounds good.

Gender: Unkown, couple more weeks till we get to find out.

Blog Roll Monday: The Kirsten Haglund Foundation


You may remember her as Miss America 2008, now she is taking what she learned that year and her empowering messages to young women everywhere to love their bodies! Kirsten is one of my favorite Miss America's ever, her platform work with eating disorders is inspiring. And it's even more awesome that she's continuing her work even after her reign as Miss America.

Her foundation provides scholarship to young women around the U.S. to enter treatments for their eating disorders. She has an inspiring message, I love keeping up with her and her travels to speak to young women all around the world.

Her message is simple: "Love Your Body, Rock the World!"

On This Lazy Saturday.......

Couple random things about Worley House:

* We love DIY'er projects!

* We don't usually decorate for Holidays except for Christmas!

* Saturday nights are usually pizza & movie nights for us [at home.]

* We love finding unique treasures for our home at flea markets, antique stores and thrift stores.

* It's taken us about two years to agree on a decor style for our place!

* The Hubs could watch endless hours of football, Me not so much. I like the Hawks that's it no one else!

* Bentley is a Cocker-Spaniel but sometimes he thinks he's a Great Dane with a BIG bark!

* Our lives are family and the church, and we like it like that!

Dressing Up the Fireplace:

I picked up these Art-A-Peel decals at World Market this week for $10 for two sheets. These are a great way for a no commitment to dress up your walls. Perfect if you're renting a place or not sure exactly your decor style you can play around with these. They peel off and stick on your wall, when you want to take them off you can easily. How great is that?!!?
Don't you just love this design? I love the swirls and vintage look, so I decided to dress up the fireplace using these, check it out:

I put them on either side of the mantle and dressed it up and added some frames and other things later.
I love the look of the peaking out behind the frames and candles on our mantle, I've always wanted a fireplace and now we have a pretty sweet one:
I have a whole sheet left, I think I'm going to use them to decorate some frames and other wall art. Stay tuned.
